Sephra Freeze Dried Scottish Strawberry Pieces

From strawberry shortcake and Eton Mess to pink chocolate bars and Dubai-style dessert cups, Sephra Freeze Dried Scottish Strawberry Pieces open up plenty of menu possibilities. The pack contains a natural mixture of slices, flakes and smaller fruit pieces, giving you different textures and finishes without having to prepare fresh strawberries. Made entirely from Scottish fruit with no added sugar, they are ready to sprinkle, mix, crush or decorate with straight from the pack.

One Pack, Several Strawberry Finishes

The pieces vary naturally from approximately 3–40mm. Reserve the larger slices for visible cake and dessert decoration, use the medium pieces in chocolate and layered desserts, then save the smaller flakes and dust for buttercream, icing and finishing.

This mixed format gives you more freedom than a completely uniform cut. A single pack can provide prominent strawberry pieces for a celebration cake, scattered fruit for a cheesecake pot and fine powder for colouring frosting.

As the fruit is naturally delicate, some pieces may break further during transport and handling. These smaller fragments are still useful and should not be treated as waste.

Make Strawberry Shortcake, Eton Mess and Cheesecake Pots

Layer the pieces with vanilla sponge, cream and strawberry sauce for strawberry shortcake pots or individual gateaux. Use larger slices on top for decoration, then mix the smaller pieces through the cream or sponge layers for strawberry flavour throughout.

For Eton Mess, combine the fruit with broken meringue, cream and strawberry sauce. Add some pieces during assembly so they soften slightly, then finish with a fresh scattering just before serving for a contrasting crunch.

They also work well in cheesecake pots with biscuit crumb and cream cheese frosting, or over vanilla cheesecake with white chocolate curls. Their red colour stands out against cream, pale sponge, meringue and white chocolate.

Build a Dubai Strawberry Dessert Cup

Layer strawberry pieces with crisp cooked kadayif, pistachio sauce and milk or white chocolate for a strawberry version of the popular Dubai-style dessert cup. The fruit brings colour and a sharper note to the rich chocolate, nutty sauce and crunchy pastry.

Use larger strawberry pieces around the inside of a clear cup, then alternate chocolate, kadayif and pistachio layers. Finish with smaller flakes over the top so customers can immediately see the strawberry element.

The same combination can be used for loaded waffles, crêpes, doughnuts and takeaway dessert boxes. Add the strawberry shortly before serving where you want it to remain crisp.

Decorate Chocolate, Doughnuts and Celebration Cakes

Press strawberry pieces into white, milk, dark, ruby or strawberry-flavoured chocolate before it sets. Use them in bars, bark, clusters, truffles and chocolate slabs, either on their own or with pistachio, hazelnut, lemon or vanilla.

For doughnuts and cake pops, sprinkle the pieces over freshly applied chocolate, coating or icing. The natural red fruit provides a noticeable finish without relying entirely on sugar decorations.

They can also be pressed around the sides of frosted cakes, scattered over cupcakes or used between cake layers. Combine them with strawberry frosting for a bold fruit-led finish, or use vanilla and cream cheese flavours to create contrast.

Turn Smaller Pieces into Strawberry Powder

The finer flakes and dust at the bottom of the pack are useful ingredients in their own right. Mix them into buttercream, cream cheese frosting, icing, meringue, glaze or milkshake powder for strawberry flavour and a natural pink-red colour.

For a smoother result, blitz the fruit into a fine powder before use. Add it gradually and test the mixture as you go, because the dry fruit can thicken buttercream, icing and glaze.

Strawberry powder can also be used to finish truffles, macarons, marshmallows and dessert plates. Try dusting only one side of a chocolate or meringue for a more controlled decorative effect.

Add Strawberry to Breakfasts, Ice Cream and Drinks

Scatter the pieces over granola, porridge, yoghurt, waffles or pancakes. They can be added directly before serving for a crisp topping or mixed in earlier when a softer fruit texture is preferred.

For ice cream and gelato, combine them with white chocolate sauce, pistachio sauce, vanilla, biscuit or meringue. They also work well over milkshakes, frappés and whipped cream, while the finer powder can be blended into drinks for strawberry flavour throughout.

Protect the Fruit from Moisture

Freeze dried strawberry pieces quickly absorb moisture from the surrounding air. Securely close the packaging after every use and store it in cool, dry conditions away from steam, sinks and open containers.

Use clean, dry utensils when portioning the fruit. An airtight container can also help protect the remaining pieces from humidity and unnecessary breakage after opening.

A: The pack contains mixed-size strawberry slices, flakes and pieces. The product predominantly consists of pieces measuring approximately 3–40mm, although smaller fragments and natural strawberry dust may also be present.

Q: Can I use them for strawberry shortcake or Eton Mess?
A: Yes. Use the larger pieces for decorating strawberry shortcakes, pavlovas and meringues, then scatter the smaller flakes through cream, cake layers or dessert pots.

A: Yes. Crush the pieces by hand or blitz them into a finer powder for buttercream, icing, chocolate fillings, meringue, milkshakes and dessert decoration.
